Banana, Berry, Choc Chip Muffins



1 Ripe banana, mashed
1 egg
3/4 cup almond milk (used coconut almond milk for extra flavour)
1/4 cup Greek yoghurt
2tbs pure maple syrup
2 cups wholemeal self raising flour, sifted
1tsp baking powder
3/4 cup frozen berry, mashed/blitzed (used blueberry)
2tbs dark choc chip
Preheat oven to 180C
Mix banana, egg, almond milk, yoghurt, and maple until combined
Add flour & baking powder and fold (don't overmix otherwise it'll come out tough)
Mix in berry & chocolate
Spoon into muffin tins (using patty cake wrapper)
Bake for 15mins
Makes 12 muffins & 8 mini muffins
