Using BakerStone Pizza Oven Box on an indoor gas stove

First off, BakerStone do not recommend using the Pizza Oven Box indoors on a gas stove due to the potential damage it could cause to your stove top (http://support.bakerstonebox.com/customer/en/portal/articles/1509028-can-i-use-my-bakerstone-pizza-oven-box-on-my-home-stove-top-).

However, I decided to give it a go on our indoor gas stove for the following reasons:

  1. Our gas stove came with a Teppanyaki plate which covers two gas burners in a similar manner which can get extremely hot.  So I was confident we would not have any issues from heat radiating below the Pizza Oven Box.
  2. We have a very high quality rangehood (extractor fan).
  3. We have a large 6 burner cooktop and there is plenty of space between the Pizza Oven Box and any surrounding objects that could be affected by prolonged high heat (eg splashback, benchtop, appliances etc).
  4. The gas burners on our stove would not be able to produce the same level of heat that is generated from BBQ burners.
With these things in mind, I felt comfortable that our stove top, surrounding objects & the Pizza Oven Box would not be damaged.  I decided to do a test run and monitor the heat in all places with a High Temperature InfraRed Thermometer to ensure my 'theories' were not unreasonable.  In my case, everything was fine and I proceeded to cook some pizzas (Do your own research if you plan to test yourself)!

It took about 15-20 minutes to heat up to start cooking some pizzas.  The temperature variation over the bottom stone was quite significant given the different sized burners and their spacing.  While this is a bit annoying, it just meant I had to turn the pizza around a bit more than usual.

You can see here that the burner on the left is much larger, resulting in a heat difference on the stone

The BakerStone Pizza Oven Box got up around 400ºC - 420ºC on the stone above our largest burner

The end result!  Not as good as my old wood fired oven, but for $149 its not a bad result

  1. I've just bought a BakerStone Pizza Oven Box with the intention of also using it on my gas hob. I assumed a gas hob cannot be that different to a gas BBQ. Now that a year has gone by since you wrote this post, have you had any problems? Thanks.

    1. Hey Andy, no problems with damage to any of my equipment. I make sure all the windows and doors are open because even with the extractor fan on, we have had a few occasions where it has caused the smoke detectors to go off. We usually need to give the stove top a good clean afterwards as well. If I had a big enough BBQ I would prefer to use it outside, but for now it does the job!
